This isn't a matter of them taking out difficulty modes from the Japanese version, no they actually changed the ENTIRE GAME for the very very very worse. Simply put Shin Onimusha JPN (with full english options) is a 9/10 game, Shin Onimusha US is a 6-7/10 game.
They didn't actually make the game "hard" they just made it tedious as fuck. They took bosses and instead of making them faster or tougher, they just gave them 10x the HP. They also lowered the strength of all your attacks making the issen a joke when it's a lethal awesome attack in the JPN one. So now bosses aren't any more difficult but they take 30 mins of repeating the same easy pattern instead of 5 mins.
You also get about 1/10th the amount of souls from enemies so you can't go around leveling up all these dozens of weapons and getting a diverse inventory of kickass tools and attacks. Considering that one of the selling points about the game was having 150+ weapons, they've basically just killed that in the US version.
So yeah, Capcom USA (or Capcom JPN. Whoever is orchestrating these changes) has done some really dumb dumb things in the past with their changes to make the US versions more "hardcore" often missing the difference between harder and "more annoying/stupid/tedious", but Shin Oni is the worst offender and just an absolute mess.
